Ginataang Talong Recipe
Ingredients:
- 3 cloves garlic, crushed
- 1 onion, sliced
- 1 small ginger, sliced thinly
- 2 pcs eggplant, sliced
- 1 cup coconut milk
- 1/2 cup water
- salt and pepper
- shrimp paste (optional)
Procedures:
- In a skillet, heat oil and saute garlic, onion, and ginger.
- Add the coconut milk and water and simmer for 10 minutes.
- Add the eggplant. Once tender, season with salt and pepper.
- Serve and Enjoy!
